I think this is my favourite cooking implement, quite one of the finest ever invented. And I have got two of them, a big one and a medium one. Both are carbon steel and both are jet black with years of use and both have a coating of whatever that acts like Teflon. They are never scrubbed with anything but a brush (to get the bits off) and that's it.

Don't ever buy one of them modern ones with a real Teflon coating.

And I have one of them gas hobs with a wok stand and a double burner that looks like a jet engine exhaust at full chat.
